The player, as an ignorant outlander, is probably not going to know the names of all the creatures he/she comes across. Would it be hard to make a script that would label certain obscure creatures 'Unknown animal' (or something like that) until the player reads books about them or asks local NPCs about 'unknown animal'?

It would be possible, but for it to work there would need to be duplicate creatures for each spawn point. One would be the 'Unknown' version, the other, 'Known'. The script would need to check if a certain book was read and if so the 'Unknown' creature would be disabled and the 'Known' would be enabled.

While it is an interesting idea, it seems like quite a bit of work to accomplish something that only adds mildly to the realism of the game. I think the time would be better spent elsewhere.

It's a very nice idea, but Uldar is right. The time would be better spent making the world first, and then adding mild realisms to it once it's finished.
