How old is the empire of cyrodiil?
( The thing that they have all control in every land,

The Septim Empire was officially established at the beginning of the Third Era, so by the time of TESIII (set in 3E427) the Septim Empire is 427 years old.
There were various Cyrodilic empires established before it, like the Reman Empire.

Well, lets see...
The First (Alessian) Empire: formed in 1E243 by Saint Alessia, fractured in 1E2331 after War of Righteousness so First Empire lasted for 2088 years
The Second (Reman) empire: formed in 1E2703 by Reman I Cyrodiil, the dynasty died out in 1E2920 so the Reman Dynasty lasted for 217 years
The Akaviri Potentate take over the Reman Empire which starts the Second Era. The Empire finally dies in 2E430 with death of the last Potentate and his heirs by hands of the assassins.
So the Second Empire formally lasted for 647 years.
The Third (Septim) Empire is formed by Hjalti/Talos/Tiber and the Third Era starts and the Septim Dynasty dies with Martin in 3E433 but the Empire formally ends with death of Potentate Ocato in 4E10.
So the Third Empire lasted for 443 years.
The Fourth (Medes) Empire was formed in 4E17 when Titus Medes defeats his rivals Eddar Olin and Thules the Gibbering and takes the Imperial Throne. By time of TES5: Skyrim it is year 4E201 so the Fourth Empire is currently 184 years old.
All together, the Tamrielic Empire is 3362 years old, not counting the years when it didn't exist.
However, I think only the Septim dynasty ever really controlled all the provinces.

That would be correct, the Septim Empire is the only entity to ever simultaneously control the the various nations or provinces of Tamerial. At least this is to my knowledge so correct me if I am wrong
