-Horses live in High Rock, Cyrodiil, Black Marsh, Valenwood (2920, FrostFall; 2920, Second Seed; A Dance in Fire, Chapter 1, 7)

-will o' the wisps in Black Marsh - combination of swamp gas and spiritual energy (2920, Hearth Fire)

-Chickens in High Rock (2920, Hearth Fire)

-Goats - people in Cyrodiil use goatskins to hold liquids (2920, Second Seed)

-Pigs, possibly in Black Marsh, Valenwood, High Rock "pig's bladder"; "Sow and Vulture tavern" (2920, Second Seed; A Dance in Fire, Chapter 2; Bone, Part Two)

-Vultures, possibly in Black Marsh - "Sow and Vulture tavern" (2920, Second Seed)

-Porcupines, possibly in High Rock - "Least Loved Porcupine tavern" (2920, FrostFall)

-"Winged bat-like creatures", presumably from Oblivion, in the service of Mehrunes Dagon (2920, Sun's Dusk)

-Lions (36 Lessons of Vivec, Sermon 6)

-Wolves [with werewolves, this is probably obvious, but might as well cement it] (36 Lessons of Vivec, Sermon 6) in Valenwood (A Hypothetical Treachery)

Sheep in Valenwood - "Care for some mutton?" (A Dance in Fire, Chapter 2, 6)

Hoarvors in Valenwood - "an insect the size of a large calf", "spiky legs holding him down while a central spiral-bladed vortex of a mouth tore through his shirt" [currently being modeled, I think] (A Dance in Fire, Chapter 2)

Carp, possibly in Cyrodiil, gets pickled (A Dance in Fire, Chapter 3)

Deer in Valenwood - "faint whiff of roasting venison" (A Dance in Fire, Chapter 4)

Large unknown bird in Valenwood - "high above the village, was an abandoned nest from some great bird in a trident-shaped branch", the nest is large enough for two men to sit in (A Dance in Fire, Chapter 4)

Cows, possibly in Valenwood (A Dance in Fire, Chapter 5)

Small flying beasties in Valenwood - "winged creatures scarcely more than a few inches long. Bright crimson eyes were set on either side of tunnel-like protuberances, the animals' always open mouths. They were legless, and their thin, rapidly beating, aureate wings seemed poorly constructed to transport their fat, swollen bellies. And yet, they darted through the air like sparks from a fire.", mimic speech (A Dance in Fire, Chapter 5)

Crabs: "The ravenous mudcrabs of Morrowind can strip a corpse down to its bones in a matter of days. Lesser crabs in other provinces can do the same in a matter of weeks."; along coasts, swampland, or marshes (Corpse Preparation v III)

Zombies: Can be raised time and again, if one gathers severed limbs and sews them back on and binds bones before raising again [the Zombie is weaker each time this is done]; Zombies are considered very weak undead "a method best left to lazy or desperate practitioners" (Corpse Preparation v III)

Mummies: "soak the decaying corpse in a bath of salt or natron" [a native sodium carbonate mineral Na2CO3] for a month to keep it from decaying further, and get rid of the smell of putrification; removal of vital organs is optional; in more moist locals like Thras or Black Marsh, you need to repeatedly apply the salts; wrap corpse in cloth or linen; mummies are much stronger than Zombies (Corpse Preparation v III)

Harpies: Found in the west, resemble Winged Twilights [not more unattractive] (Darkest Darkness)

Raven: "Like a raven of death on its aerie" (Death Blow of Abernanit)

Giant Rats: Possibly distinct from Morrowind's Rats; live in the wilderness (Elante's Notes)

So my guesses would be:

--the small, silver fish could be anything from a minnow, to kippers (sardines), or herring.

--unknown fish that is slow and whiskered could be loaches, plecostamus or catfish.

--manticores, for those who don't know, can have two possible forms. The first has the head of a man, body of a lion, porcupine quills and the tail of a scorpion. The second has a head of a man, with spiral or curved horns (like a goat), and often the feet of a dragon.

--will o' the wisps are the emissions from peat bogs that were worshipped ages ago. I think I mentioned this elsewhere, just didn't give a name to them.

The Faerie heirarchy is exactly the same as that of the Celts. I have a book here detailing every possible species of faefolk, including what they look like, and myths associated with them. It may come in handy.

I don't think it's even clear whether Feyfolken is a type of daedra, or a unique.

I like the addition of mant more eddible creatures and herbavores, the fact that guars, scribs, Nitches,and kwamma workers were the only things that would not try to eat me on sight bugged me, too many carnivores, it was an unstable and impossible ecology. Even if we don't add more variety in ecology, we should deffinitely increase the number of non-agressive animals just for the sake of being realistic

I believe the winged batlike creatures you refered to earlier were Imps Earl. I've played daggerfall and the appearance of imps are small humanoids with big red wings, small white horns, and green skin. they look slightly bat like and are native to oblivion i believe, although i don't think anyone's ever proven it, i'll look it up just to be sure but might take a few days.
