How feasible would it be, technically speaking, to create new, skeletal creature models? Skeletons of every creature wouldn't be realistic, but guar skeletons, kagouti skeletons, and cliff racer skeletons might be interesting.
The guar skeletons would be particularly useful. I'm not an expert in Dunmer burial practices, but the Dunmer do worship their ancestors, and family will often leave offerings to appease the spirits of their kin. I think it'd be reasonable that, if a Dunmer family was heavily involved in guar herding, breeding, and farming throughout generations, the entombment of one of their deceased prized guars might please the ancestors. I doubt the Dunmer would let a beast have the same place of honor, but I'm sure an animal-loving Dunmer family would surely allow a marked guar hide, or a claw, or a skull to be buried with them.
Other animal skeletons would be useful for more realistic landscapes (you're bound to come across an animal skeleton or two) or for weirder claims -- say, a necromancer is raising a herd of skeletal kagouti so that he can rob merchant caravans.
